Chicken ideas?

Bought myself a shed load of fillets yesterday and just looking for some ideas of stuff to do with them. Want the meals to be fairly clean and not too carb heavy.


Some which spring to mind


Chicken curry


Sweet and sour chicken


Chicken and sweetcorn pasta


Cajun Chicken and baby potatoes


Anyone got any good ideas they would like to share. Will eat a lot of them just plan or with some sauce and spice but would like to try something different as well. .
 
I've got loads, but chicken, chorizo, red peppers and a can of chopped tomatoes (with Basil, Oregano and chilli flakes) you can add some wholewheat pasta if you wish.


Wholemeal wrap Fajitas, cook strips of chicken in fajita seasoning (old el Paso original BBQ one is best) sliced peppers, onions, make a Salsa with a tin of chopped tomatoes, tomato puree and a bit of seasoning and sweetener, grate a bit of cheese and stick in micro for 40 seconds, then a squirt of low fat mayo.


Chicken, fresh Pineapple and broccoli stiry fry with noodles,then add some chinese spices.


Jamaican stew with sweet potatoes, pineapple, onion, carrots, sweet peppers and chilli flakes.

Cheers. Really like the sound of the first one. Will give it a blast for sure. Cant stand pineapple unfortunately.
 
Chicken skewers are quick and easy,chicken,peppers,red onions bit barbeque sauce.


chicken breast baked with bacon on top and tad barby sauce finished off with grated cheese and baked pot.


Asda sell roasting bags,about 70p for ten iirc,same as those maggi so juicy but without the seasoning,we get the bags and just throw in our own seasoning.
 
Trebor's post reminds me, you can always use some spiced up whole Earth PNB smeared on the chicken for chicken satay.
 
Cheers guys. The breasts themselves are pretty grim. Bought them from the chinese wholesalers at a price which seemed to good to be true.

Butterfly the breats, rub Nandos piri piri sachet into them (60p) an BBQ. Oh Mai dayz.
 
^ Just tried the Lemon and Herb Nando's rub, same 60p packet I think..delicious, esp with coconut tilda microwave rice!


Did a whole pack, about 250g, of mini fillets and only used 1/3 of it.

Do you jerk it up yourself or use one from a jar? Want to keep things fairly simple. Im pretty handy in the kitchen but detest washing up!

i just use dry mix from a tub with some olive oil. think its dunns river or summat? little bit goes a long way

you do know there is an abbatoir near you dont you.... and right next door a wholesalers? there are frozen food places up the road in garston as well and believe it or not some butchers?????

this remoneds me of a girl I went out with for a while that didnt know what was at the other end of her street as she had never needed to go out of it...
